And finally……..
I decided this month to finish the Newsletter with a recipe. I know it looks a lot like pond weed but it tastes delicious and is one of my favourite soups with a chunk of bread!

Super Greens Soup
Ingredients
Olive Oil
1 Chopped Onion
1 Head of Broccoli cut into florets
3 handfuls of frozen peas
700ml vegetable stock
250g bag of spinach
Sprinkle of salt & pepper to season
Optional: 1 chilli or fresh ginger
Heat one tablespoon of oil in a large saucepan and sweat the onions until translucent. Add the broccoli and peas to the pan, cook for 5 minutes. Then add the stock – the vegetables should be just covered (add a little more water if needed). Bring to the boil, then simmer until the broccoli is tender, roughly 4 minutes. Don’t over cook or the veg will lose it’s vibrant green. Using a stick blender, start blending the soup adding a handful of spinach at a time, it will cook as it mixes with the soup. Blend until the soup is thick and smooth.
Absolutely delicious! Enjoy!
Hope you have a great weekend!
